 We’re Pampered, Not Perfect!

If you’ve been reading my posts, you know I do not consider myself a cook.  But I do like cooking for others!  I especially like to cook now that I’ve learned the phrase “I’m Pampered, Not Perfect!!” I learned that with the right tools in the kitchen, my life is easier when it comes to cooking for the fam!  Last June, I bit the bullet and became a Pampered Chef Consultant. I did it at first because my hubby lost his job, and I felt like I needed a way to help out financially more than I already was.  That’s when my friend (and director) asked me to coffee.  I heard all the reasons of “Why not?”  Why not bring in extra cash?  Why not get great products free for your own kitchen?  Why not help  others fill their kitchens with great products for free?  Why not?   And here I am!  I love this “job” of mine….if you can call it that!  I go places, meet new people, cook great food, eat great food, and get cool products for FREE!  What could be better than that!?

I have a degree in Elementary Education.  I teach Preschool full time during the school year.  I have 2 little kiddos and a wonderful hubby.  I continued to sell PC even after my hubby got a job again.  I continue to sell, because I love it!  I love getting out of the house, chatting with others.  I love to see others happy, getting together with their friends, learning new and fun recipes I share with them, and purchasing a tool I know will make their cooking experience better!  My education background helps me so much when I get in front of the crowd…I have the words….I like the words!  I know someone who prefers not to talk as much, and does so well….she does more station style shows, allowing the guests to try and play and learn together.  I love this way as well!

Pampered Chef to me is finding the right tool for you.  I have kids.  So, I try to make those with kiddos see what tools work well with my kids and why.  Moms and Dads, isn’t it nice not to have think about what will be best for your kids? Many times, we have no idea what will be best.  But really, we do.  We’re the mom and dad.  We know what our kids need. We know what they can do.  ***Now…let me help you find the right tools to go with what you know already!  My little Miss A is dairy free.  So I am always looking at the back of boxes to check to see if it has milk in the ingredients.  Guess what?  You can use PC tools and make your own crust free pocket sandwiches to fit your kiddos needs.  You can fill the Leak proof containers with peanut free snacks/ Dairy free snacks/ gluten free snacks…etc.  You can pack it with the foods you know your child will and can eat without the worry you missed something on the box!

I’m now always on a mission to search the Pampered chef recipe box online, and try something new to me.  I love the tried and true recipes.  I love to get recipes from others.  Here is one that I made (before Miss A was found to be dairy free) that my family loved!!  It was so easy in the Rockcrok Dutch Oven….One dish meals are amazing aren’t they!?

60 seconds to Breakfast!

I woke up this morning, happy to see the sun was up, it was after 7 (always a plus), and I had coffee downstairs ready to be brewed. I then thought of what I was going to have for breakfast. Should I have cereal, toast, eggs…. No not eggs, takes too long to cook…. Until I remembered my ceramic egg cooker was waiting to be used!  I pondered the idea of an omelet or scrambled eggs, but I was feeling for a poached egg. Yep, I was going to make a poached egg in the microwave! 2T water and one egg, poke egg.  Microwave for 45 seconds,  remove and eat! I added mine to toast and a side of cantaloupe. Delish.

I love when I have products in my kitchen that make my life easier, don’t you!?

Tonight’s homework for you….. What will you make for breakfast tomorrow that will be quick, easy, and filling?!  (Yes, I’m a teacher by day! )

It’s for real!

You know how I said Miss A can’t have dairy? Sometimes I let things slide….. then I regret it! Example A: last night I made homemade ice cream.  Not belly friendly for her! I made her a substitute but our kind leaked to hers and made a ring around it with milk ice cream.  She ate it with a smile on her face.  She also ate the left overs in the machine (without me knowing…… you know what happens when the kiddo is quiet? Trouble!) Yup… last night,  wet the bed.  Today,  icky poops,  toots, and wet her pants twice today! We are so trained now tho look at the label.  Why do I do it? She’s 4. I have to watch.  She doesn’t get a rash. She doesn’t stop breathing.  But she ends up in the bathroom and having to change her pants.

I was always one of those parents that thought my kids would not be bothered by food allergies.  But why not my kids? I have sensitivities.  Case in point…. two days ago I ate something that caused me to break out in bumps all over my arms, shoulders,  chest and belly and some on my face! Yup.  Why wouldn’t my kids have some intolerance?

My hubby tonight said he was a bad dad because he has to be asked by our 7 year old if something has milk in it. That he doesn’t remember to look every time.  I told him he’s definitely not a bad dad.  It will take us all time to get used to it.  Everyone is there to help us remember.  And we are human,  we forget.

I hope one day soon,  Miss  A will choose on her own not to eat dairy…. ever.  But until then….Becky

Healthy. Delicious. Yes!

OK all.  . . . This is an awesome recipe you should try!!!  You could make it completely vegetarian or add the chicken!  Sometimes I want that basil and tomato flavor bruschetta on a little pieces of Nummy bread,  but in a more healthy way!  What I love best about this,  it’s done in under 30 minutes,  easy!  Come on,  using the pampered chef rockcrok allows me to cook this in the microwave and it tastes amazing!! Noodles in the microwave is a thing!  Chicken in the microwave is a thing! And it’s great!   So,  I’m noticing I’m using a lot exclamation marks!!  Lol.  I’m really into this meal 😂

The Brownie Pan

This Brownie Pan is my favorite pan in the kitchen to make brownies in!  It makes the best brownies out there!  For all of us who love the edges, you will be in heaven!  For those who love the insides….you will love it too!!  It just gives you the perfect individual size that can be customized to fit your guests’ needs!brownie pan

Take a look at this picture above for a sec!  The cook is pouring pancake batter into each well of the brownie pan!  Why?  So she doesn’t have to stand at the stove for half an hour or more flippin’ pancakes!!!!  These will go into the oven for about 12-15 minutes until they are golden brown and pull away from the sides.

Last year, I had a large group stay over at my house.  I panicked in the morning when I remember I didn’t plan for breakfast!! What was I going to do with 7 kiddos and 4 adults!?  I quickly grabbed my pancake mix, 2 brownie pans, and through them into the oven!  I luckily had some frozen fruit that I made into a fruit puree for a topping, maple syrup, and powdered sugar….walaa!  The PERFECTLY QUICK BREAKFAST!!  Made in the Perfect Pampered Chef Brownie Pan!

These my friends,  are the Consultant Exclusive, Double Chocolate Cheesecake squares!!  Also made in the Brownie pan!!!!  OMG!  Seriously…… Can you say num!!!!???  Striped cookies on the bottom for a crust, topped with a chocolaty cheesecake you can’t resist!  I like to top my finished product with homemade whipped cream made in my whipped cream maker from Pampered Chef!!   30 seconds to fresh whipped cream….can’t beat it!

Nummy NonDairy Foods!!

Did you know???

There are many foods that do not have any milk in them!  I was surprised by a few!  Here’s my list:

                          *   Oreos  🙂  Even the Double stuffed kind!!  What could be better than that!?  Seriously!  No need to be deprived of a super amazing cookie treat, when you know these have no milk inside them!  LOVE!!  Think of the possibilities!  Oreos on the bottom of Dairy FREE brownies?  NUM!!

                    *  Ritz Crackers….for the littles out there, crackers are often an easy snack to grab…but when they include milk in the ingredient list, it makes it challenging to grab the right one.  Knowing that I can grab the Ritz for Miss A and not have to worry, is such a relief!  Top it with a little jam of choice, and it turns into a delicious snack indulgence!

               *  Not too surprising, but happy to be reminded…..HUMMUS.  No way does Hummus have dairy in it.  But how many of you think of eating hummus?  How many think of giving it to your kiddos as a “dip”?  I don’t think of it often enough.  It is great for veggies, crackers, chips, or even on a sandwich!  Every store has their own brands along with national brands.  Try a few….mix up the flavors…see what you like best!  (I am not paid by any brand to advertise, but I do know that I like this hummus a lot!)

           *  SO Delicious Dairy FREE Coconut milk Chocolate peanut butter swirl “ice cream” is amazing for my Miss A!!  This is one of her favorite “ice cream treat”    They have a good number of different flavors to try, but when you are running late and need to grab one, try this one!!

           *  Duncan Hines Brownie Mix!!!!  Of course not the milk chocolate kind, but come on~  bring a dessert to share?  Ok….brownies it is!  Chewy Fudge Brownie Mix

Vegan Strawberry Ice cream from Pampered Chef

I scream, you scream, we all scream for Ice cream!!  This recipe will be perfect for my little Miss A!  Non dairy, yet delish!  What type of ice cream do you love most—what flavor that is?  I have always always always said chocolate!  As I’ve grown up, it has continued with chocolate, but with something else with it….nuts, syrup, marshmallows, caramel…. you get the drift….something nummy to go with it!  I did tho, take a second look at this Pampered Chef Vegan Strawberry Icecream…. I was actually thinking “I’m going to be the best mom ever with this stuff!!!”  We’re making it tomorrow, and I’m hoping my prediction is correct, lol! Come on, can you hear it?  “Mom, you’re the best mom ever! You made me ice cream without milk in it and it is delicious!!”  Seriously….strawberry chunks throughout cannot be a bad thing!  I’m so excited! vegan strawberry icecream (1)

My Dairy FREE Kiddo!

In the last couple months, my 4 year old has gone Dairy FREE!  What a change in my thought process this brought on!  Did you know there is milk in soooo many things?  Trying to find bread that is dairy free and is not full of unwanted sugars is very hard to find!  And of course, ice cream.  The thing that she loves so much, but now knows it hurts her belly, is something we are working on finding a wonderful replacement.  I have given her “SO Delicious” icecream, and she does like it as a treat!  But…..I have earned a FREE Ice cream maker from Pampered Chef last month, and I’m on a mission to find the best homemade recipe for her to enjoy!

This past weekend, we went camping as a family.  My family was so great being my extra eyes and ears, making sure Miss A did not eat dairy.  As you probably can imagine….kids have more access to random foods while out camping with others than they would at home.  It was wonderful having those extra people around watching for me when I was not there at that exact moment!  Simple foods such as fried fish (which was dipped in milk before frying) was almost over looked…but caught by my sister!  S’mores were expected, so I brought along the striped cookies (from Aldi) that were non dairy.  These were a great sub for the graham cracker and chocolate pieces…. and Miss A was thrilled!  My goal this weekend was to bring everything I was expected to bring, in a nondairy form so that no matter what, she would have something to eat.  Fortunately….the love of our family goes into food, and knowing that dairy was an issue, many of the things around had a non dairy option!  So awesome!

 

It is a game changer.  An eye opener.  When your child’s belly hurts, and going potty doesn’t help, just because she had dairy in her crackers, or bread…..it means you put a little extra attention into looking at the back of boxes at the grocery store, the potluck table, the camper next door’s snack table, and more!

Letter Art Fun!

letter art (1)My life revolves around children…it really does…and I love it!  Part of my school week involves teaching letters….ok most of my school week involves teaching letters!  Let’s be real!  One of my favorite things to do is letter art.  We create a craft that involves a letter of the alphabet in a fun way!  Pinterest has been my friend, giving me ideas for how to introduce them and how to have fun with the art!  At the end of the year, we make a title page for it, and get to enjoy the whole book we’ve made!

Preschool Fun

Moms day

Happy mothers day to all you wonderful women who have children of all ages!

 

Today in my preschool,  we celebrated mom’s day.  I invited in all mom’s (or mom replacement for the day), for 2 hours of play,  crafting and snacks.  It was so fun!

I got a chance to play with my own kiddo while the others were taken care of.  So fun! We made fire breathing dragons and popsicle stick picture frames!

Love this time of year! Thank you again mom’s for joining us and playing with us!

Sleep….. necessary?

So look, this week I’ve been tired all day every day.  Last night I couldn’t keep my eyes open and fell asleep on the couch at 5:30, woke up at 7, went to bed at 7:30, woke up at 5:30. Feel great!

 

What a concept! Lol! Who would have thunk it?

Mom’s do need sleep! So ladies….. Go to bed! Curl up and sleep! Try it,  you may like it!
