Get dinner on the table in 10 minutes with this easy salmon dish that will get additional flavour from zesty lemon. Serve with broccoli to assist you on the way to 5 a day.

- 25g/1oz butter
- 150g/5oz salmon fillet, skin on, thickly sliced
- lemon, juice only, plus lemon wedges to garnish
- little handful Tenderstem broccoli
- salt and freshly ground black pepper
Melt the butter in a frying pan. Include the salmon skin-side down, season with salt and freshly ground black pepper and squeeze above a small lemon juice. Fry for 2-3 minutes, then flip the salmon over and fry for a more one-two minutes, or until finally cooked via. Squeeze above a minor more lemon juice and taste to check the seasoning. Get rid of from the pan and set aside.
Place the broccoli into a pan of boiling salted water and boil for three-four minutes, or till al dente. Drain the broccoli.
To serve, pile the broccoli onto a serving plate and leading with the pan-fried salmon. Garnish with lemon wedges.
Lemon juice is wonderful for including flavour to dishes, you can get a bottle of lemon juice for as minor as 60p.
